Mexican Lasagna

This recipe was taken from Vegetarian Times Complete Cookbook, we enhanced it by adding chicken (optional) and it turned out great!
Serves 4
INGREDIENTS:
2 tbsp olive oil
2 boneless, skinless chicken breasts (optional)
1 green bell pepper, coarsely chopped
2 cloves garlic, minced
1 tbsp chili powder
1 tsp ground cumin
1 pinch cayenne, optional
1 16-ounce can black beans, rinsed and drained

Ground Beef Stroganoff

I was requested to make beef stroganoff, so I went on a search for a good recipe.  It took a long while to find one that sounded tasty, but the search paid off.  The result is very, very tasty!
Serves 4
INGREDIENTS:
1 pound ground beef
2 tbsp whole wheat flour
1 tsp salt
1/4 tsp pepper
1/4 tsp paprika
1/4 cup butter

Orange Margarita

A refreshing margarita, equally delicious pool-side or around the dinner table.
INGREDIENTS:
1 part Tequila
1 part Grand Marnier
2 parts fresh-squeezed lime juice
4 parts fresh-squeezed orange juice
DIRECTIONS:

Combine all ingredients
Serve blended or on-the-rocks (We prefer on-the-rocks)
Enjoy!
