Fish Tacos
These tacos are great made with any fish you like. We enjoy them with Mahi Mahi.
Makes 4 Tacos
INGREDIENTS:
12 oz fish
2 tbsp olive oil
1 jalepeno
1 clove garlic, minced
1/2 cup red cabbage, chopped
3 tbsp lime juice
1 tbsp honey
8 corn tortillas, taco size
DIRECTIONS:
- Rub fish with 1 tbsp olive oil
- Broil for 7 minutes on each side, or until fish flakes with a fork
- Heat 1 tbsp olive oil over medium heat
- Saute jalepeno and garlic until garlic begins to brown, remove from heat
- Mix cabbage, jalepeno, garlic, lime juice, and honey in a bowl until cabbage is well coated
- Layer 2 tortillas, place fish on tortillas, add cabbage mixture
- Enjoy!
