Sweet and Sour Chicken

Everyone knows this popular oriental dish, but our version is sweetened with honey, instead of refined sugar or corn syrup!

Serves 3-4

INGREDIENTS:

2/3 cup tomato paste (Many tomato pastes have high fructose corn syrup or sugar.  We use Muir Glen Organic Tomato Paste, 6-Ounce Cans (Pack of 24) because it does not.)

2/3 cup white vinegar

1/2 cup honey

2 cloves garlic, minced

1/4 tsp paprika

1/4 tsp cayenne pepper

1/2 tsp red pepper flakes

salt and pepper to taste

2 tbsp olive oil

2 boneless skinless chicken breasts

3 bell peppers, different colors

20 oz. can pineapple chunks (in juice)

DIRECTIONS:

For Sauce:

  1. Combine first 8 ingredients in small saucepan.  Bring to boil.  Whisk and let simmer until smooth.  Set aside.

For Chicken:

  1. Heat olive oil over medium-high heat in a large frying pan.  Add chicken and cook until done (~10 minutes)

For Bell Peppers:

  1. Remove stems and seeds.
  2. Cut into bite sized pieces.
  3. Steam peppers for ~10-15 minutes or until tender

Final Prep:

  1. Combine sauce, chicken, peppers, and pineapple in frying pan over low heat.  Mix well.
  2. Serve over basmati rice and enjoy!
