Mushroom Asparagus Chicken

We came up with this recipe when we found we didn’t have the correct ingredients for the one we were making.  It turned out pretty nicely!

Serves 2

INGREDIENTS:

2 tbsp olive oil

2 boneless skinless chicken breasts, no more than 1/2 inch thick

2 cloves garlic

1/2 cup chicken broth

1/2 cup red wine

2 tbsp whole wheat flour

4 oz button mushroom

4-5 sprigs fresh thyme

1/2 bunch fresh asparagus

salt and pepper to taste

DIRECTIONS:

  1. Heat oil over medium high heat in large frying pan
  2. Add chicken and brown on both sides, ~5 min each side
  3. Remove chicken from pan, set aside
  4. Brown garlic in chicken pan
  5. Add chicken broth, red wine, and flour to pan, whisk until evenly mixed
  6. Add mushrooms and thyme, cook until thickened, stirring occasionally
  7. Steam asparagus until tender, ~5-10 minutes
  8. Add steamed asparagus to mushroom sauce mixture, mix
  9. Return chicken to pan, cook over medium heat until no longer pink in center, ~5 min each side again
  10. Serve over rice or pasta, and enjoy!
