Mushroom Asparagus Chicken
We came up with this recipe when we found we didn’t have the correct ingredients for the one we were making. It turned out pretty nicely!
Serves 2
INGREDIENTS:
2 tbsp olive oil
2 boneless skinless chicken breasts, no more than 1/2 inch thick
2 cloves garlic
1/2 cup chicken broth
1/2 cup red wine
2 tbsp whole wheat flour
4 oz button mushroom
4-5 sprigs fresh thyme
1/2 bunch fresh asparagus
salt and pepper to taste
DIRECTIONS:
- Heat oil over medium high heat in large frying pan
- Add chicken and brown on both sides, ~5 min each side
- Remove chicken from pan, set aside
- Brown garlic in chicken pan
- Add chicken broth, red wine, and flour to pan, whisk until evenly mixed
- Add mushrooms and thyme, cook until thickened, stirring occasionally
- Steam asparagus until tender, ~5-10 minutes
- Add steamed asparagus to mushroom sauce mixture, mix
- Return chicken to pan, cook over medium heat until no longer pink in center, ~5 min each side again
- Serve over rice or pasta, and enjoy!
