Honey Chicken

This a great meal for a Sunday evening by the grill! Use option 2 if you’d rather stay indoors! 

Serves 2

INGREDIENTS:

2 boneless, skinless chicken breats

1/4 cup olive oil

1/2 cup honey

1 clove garlic, minced

1/2 tsp cayenne pepper

1/2 tsp paprika

1 tsp lemon juice

DIRECTIONS:

  1. Heat 1 tbp olive oil over medium-high heat
  2. Add garlic and brown
  3. Add the honey, cayenne, and paprika
  4. Cook and stir until smooth
  5. Remove from heat and add lemon juice, set aside
  6. Rub chicken with remaining olive oil, dust with salt
  7. Option 1: Grill chicken over medium heat until cooked, flipping once, ~6-10 min each side depending on thickness, transfer chicken to plates and drizzle with sauce
  8. Option 2: Place chicken in an oven-proof dish, cover with honey sauce, bake at 400° for ~20 min, flip and bake another ~10 min or until chicken is done
  9. Serve with corn on the cob and a fresh salad. Enjoy!
