Honey Chicken
This a great meal for a Sunday evening by the grill! Use option 2 if you’d rather stay indoors!
Serves 2
INGREDIENTS:
2 boneless, skinless chicken breats
1/4 cup olive oil
1/2 cup honey
1 clove garlic, minced
1/2 tsp cayenne pepper
1/2 tsp paprika
1 tsp lemon juice
DIRECTIONS:
- Heat 1 tbp olive oil over medium-high heat
- Add garlic and brown
- Add the honey, cayenne, and paprika
- Cook and stir until smooth
- Remove from heat and add lemon juice, set aside
- Rub chicken with remaining olive oil, dust with salt
- Option 1: Grill chicken over medium heat until cooked, flipping once, ~6-10 min each side depending on thickness, transfer chicken to plates and drizzle with sauce
- Option 2: Place chicken in an oven-proof dish, cover with honey sauce, bake at 400° for ~20 min, flip and bake another ~10 min or until chicken is done
- Serve with corn on the cob and a fresh salad. Enjoy!
