Garlic Rosemary Chicken

My college roommates loved when I made this meal.  It was her favorite!

Serves 2

INGREDIENTS:

2 boneless, skinless chicken breasts

1 large egg

1/2 cup breadcrumbs (Check out our online store for the type we recommend)

1 tsp dried basil (or 3 tsp fresh basil)

1 tsp dried oregano (or 3 tsp fresh oregano)

5 tbsp butter, melted

2 cloves of garlic, minced (feel free to add as much as you like)

6 sprigs fresh rosemary

DIRECTIONS:

  1. Whisk egg in bowl
  2. Mix breadcrumbs, basil, and oregano
  3. Dredge chicken in egg
  4. Coat both sides of chicken with breadcrumb mixture, place in oven proof dish
  5. Add garlic to butter and melt in microwave (~30 sec)
  6. Poor garlic butter mixture over chicken in pan
  7. Place 3 sprigs of rosemary on each chicken breast
  8. Bake at 400° for 20 min, flip, and bake another 10 min (time is estimated for ~1 inch thick chicken breasts)
  9. Enjoy!
