Scrapple

The recipe for this New England breakfast tradition was contributed by our good friend, Nina. The ingredients might sound strange, (apples and sausage together?), but trust us, it’s a great combination!

Serves 2

INGREDIENTS:

1/2 yellow onion, diced

2 medium size apples, cut into bite-sized pieces (The apples have to be a sweet variety. We suggest galas or fujis.)

1/2 lb sausage or fake sausage if you don’t eat meat (For vegetarian sausage, we recommend Morningstar Farms’ sausage patties.)

~1 tbsp of olive oil

2 tsp of sugar

1 tbsp of cinnamon

DIRECTIONS:

Saute the onion in olive oil, until translucent

Add the sausage and cook until starting to brown slightly

Add the apples  

If necessary, add a few tablespoons of water to the pan to keep things from sticking

Sprinkle cinnamon and sugar into pan

Cook until sausage is browned and apples are soft

Serve with fried eggs and enjoy!
